Mrs. Alice's Apple Muffins

Mrs. Alice stopped by our district office a few weeks ago and dropped off delicious apple muffins.  I admit that I didn't know Mrs. Alice prior to indulging in her famous muffins, but I am now a fan!  I discovered that  Mrs. Alice is not only a fabulous cook, but she is also the mother of one of our principals.  When I think of fall, I think of the many scrumptious recipes using apples, sweet potatoes, and pumpkins.  This recipe has become a new addition to my fall favorites. So let's put on a pretty apron and get started!  These are my favorite red aprons.  The striped one was made by my grandmother and my mom made the red with white lace apron.  I just love aprons!  If they could talk, what tales would they tell?

Here is what you will need . . .
The Starting Line-Up:
1 1/2 Cups All Purpose Four                                            1/4 Cup of Shortening
1 3/4 Teaspoons Baking Powder                                      1/2 Cup of Milk
1/2 Cup Sugar                                                                  1/2 Cup Grated Raw Apple                     
1 Egg, Beaten    
Topping:
1/2 Stick of Butter                                                            1/2 Cup of Sugar
1-2 Teaspoons of Sugar                                                        

Sift flour with baking powder, salt, and sugar.  Using a fork, cut in shortening until the mixture resembles cornmeal. 
Mix beaten egg with milk.  Add milk/egg mixture and grated apple all at once to the four mixture.
Mix quickly and thoroughly.  Mixture will be thick.  Fill a greased muffin pan or muffin cups to half full.
Bake in a 350 degree oven for 15-20 minutes.  Don't over bake.  When muffin tops are firm to the touch, they are done.  For the topping:  Make a mixture with 1/2 cup of sugar and 1 teaspoon of cinnamon.  Melt 1/2 stick of butter.  Remove muffins from pan and dip top in butter.  Notice the cute muffin cups!
 Now lets dip the top into the yummy sugar and cinnamon mixture.
I can't wait to serve these sweet, little treats as our dessert tonight.  Better yet, I can't wait to eat one or maybe two for breakfast.  Add a cup of coffee and my day will start off in a happy way!
I did tweak Mrs. Alice's recipe a tad.  The original topping portion of the recipe calls for 2 cups of sugar and 2-3 teaspoons of cinnamon.  Mrs. Alice melts 1 cup of butter and rolls the entire muffin in butter and then coats the entire muffin in the sugar/cinnamon mixture.  If your family has a sweet tooth, you may want to dip the entire muffin.  Either way, they are delicious!  Let me know what you think!

  3. These sound and look wonderful!! Your apron collection is so charming- and how fun that they all happen to be red and white. And that they were your mother's and grandmother's is so special.
    If you ever see it (I can find it at my regular grocery stores) give the "Spectrum Organic Shortening" a try... I have been super impressed with it and have used it for the last several years instead of Crisco.

      This is the first I have head of Spectrum Organic Shortening. I will be on the look out for it. I wish I could say that we eat mainly organic, but I try to incorporate as much as I can into our diet. As far as the aprons, I love to wear my grandmother's and mother's aprons. I am blessed to still have my mother and mother-in-law with us. I would dearly love to be able to have my sweet grandmothers in my kitchen just to chat and cook! Thanks for stopping by!

  5. Oh yum! the cinnamon sugar topping looks divine. My sis just gave me some of her apples from her tree. I made apple crisp on Sunday. These soon will be gracing my table. Fun Fall Door Decor

I am ready for the heat of summer to be over and the cool breezes of fall to head our way.  My sister called me the other day and said she wanted to pull out her autumn decorations and to that I say "Amen, Sista"! We both can't wait to say, "Happy Fall Ya'll"!! In the meantime, I need to update my fall door decor and have been looking for a few, fresh ideas.  Better Homes and Gardens had some wonderful fall wreath ideas.  I adore this unusual "wreath" made from a rake. Who said a wreath must be round? Etsy and Pinterest have an abundance of wreath ideas including several swags to use on your harvest door. Another cute idea from Better Homes and Gardens. It makes me think of  warm apple crisp topped with a dollop of whipped cream!   Yum!  Or how about those wonderfully apple scented candles?  Love those! Thanksgiving Dinnerware to Grace Any Table

Southern Living recently published an article entitled "Turkey Plate Special" chronicling the origins of certain patterns.  Who knew that when Abraham Lincoln declared Thanksgiving a national holiday in 1863, we would end up with beautiful transferware patterns honoring the official bird of Thanksgiving?  I was excited to see my pattern, "His Majesty" by Johnson Brothers in the article.  We lovingly call these our Traveling Turkey Dishes.  Click  here  to find out why! I set our Reading Room   table with His Majesty for a quick peek at this beautiful pattern.  I love my "Traveling Turkey Dishes".  It is a joy to get them out and use them throughout November.  I also love this old table.  It has the scars of a well lived life and reminds me so much of my sweet grandmother who loved it as much as I do.
